hog head cheese

im headed to my cousins wedding this week in atlanta and my uncle from california wants to try some hog head cheese. ive only had it a few times and have never bought it. wheres the best place in br to buy some?

Serve the head cheese with the little circular (crouton-like) toast, instead of plain old crackers.

I agree. It's the best I've ever had. I was there last week, for my first time. I got a couple of pounds of it. My friend got some boudin. I went back out to the truck and he was eating the boudin right there, RAW. That's when I learned that boudin is one sausage, if it's even a sausage, that does not require cooking. I'm not sure how many people in Louisiana know this, but I'm one who didn't. And, I'm sure going back.

It is not raw, it is cook (steamed). I wouldn't call it sausage, more like a type of jambalaya in a casing.

Try this one time.. slice it fairly thin, put in tupperware and cover with vinegar and eat it on a cracker the next day.. The first bite will make you pucker!

I wouldn't call it sausage either, but it is ... its blood sausage but we all mostly eat the unbloody white boudin and never call it sausage. If you wanna call it something in a casing it's more like dirty rice than jambalaya.

As for the novice wondering if local people know it can be eaten "raw", that would be a yep my friend ... for breakfast, lunch, dinner & midnight snack. Welcome to Louisiana.
