Awesome! I smoked a brisket once that I left sitting in the cryovac in the fridge for 30 days. It was incredible!

Aren't you increasing your risk of contamination and bacteria by doing this?

A fridge is a very dirty place. Even when kept clean. Plenty of micro-organisms lying around in there.

Potentially but he is just cooking them to rare, so I doubt that will kill bacteria. But the fact of the matter is if you go to a nice steakhouse, most of them either dry or wet age for at least 20-30 days, and it's delicious. I think I'll risk it

another common myth is that somehow the 'inside' of the steak (the part that's rare) can get bacteria. that's not true. this comes from hamburger meat which is all ground up together and potentially bacteria could lurk anywhere in that meat.

with steak, it would be on the surface..which i sear the shite out of on my grill!

Wow that is great to know, I cook mine to rare anyway because it is sacrilege to go beyond Medium Rare in my opinion anyway with a nice steak

Tried the dry aged several times and still have yet to develop a taste for it. I really want to try a wet aged brisket as an earlier poster mentioned.

So you are saying that Salmonellae and e Coli live only on the surface of meat? Is that correct?

I'm not sure. The wings my girlfriend liked, so I wen with her a couple more times and didn't mind it, next thing I know I love it. Lemon pepper I think I just finally had someone use it right and liked it.

Tea was also an acquired taste. I just had an entire gallon so I was gonna drink I until it was gone. When I finished I made another gallon, because it was healthier than soft drinks...now I prefer it.

Add darker beers to that list. Hated the stuff for the first year or 2 of college.
