re: Grilled crabs -- saw a recipe on FB... anyone do crabs this way?

I just give it a little twist which detaches that leg and the meat all comes on on it.

I'm not sure I understand the cutting of the knuckles, so I'd like to see those pics.

It's a game changer. After you clean the guts and lungs (and eat any eggs or fat inside) you half the crab down the spine. Then take a knife and gut horizontal through the endoskeleton. Making quarters. Then the meat falls out.

ETA: Fat boy might be talking about the legs. To get the most meat from the knuckles crack them closest to the body. The fin is stronger and it feels better from that end.

Gamechanger is right.
Everything I'm seeing on YouTube is off. They aren't cutting at the knuckle. That's the trick.

I'll keep looking.

The first thing I do is twist the fin, pull out the lollipop and eat the jumbo lump attached to the end of those. I pull the claw legs off, crack and eat those. I pull off the "straws"/skinny legs and suck those to get that sweet meat from them. Then, I crack it in half at the spine and break each half in half and pick the meat out from there.

If you cut at the knuckle, or leg, before you break in half then break in half again, it frees up all the meat and it slides out with no effort.


That's how the Asian ladies at one of the processing plants on the West Bank showed my mom. They do it all day, and for speed/quantity.

It's the most efficient way to get lump crab meat out.

Wasting a lot of effort.

ETA: I'll use one of these queers tumblers or photobuckets and post pics. I went through most of my adult life wasting effort and crab meat.

But if you want lump, and not little shards of meat, cutting the leg at the joint gives you that lump chunk of meat.

So, are you removing the legs before you break them in half? That's what I do and I use a little crab spoon to scoop the meat out of the sections. If your way is better, I sure want to know it. I love crabs.

Obviously, so am I. I don't have a problem getting the meat out of the crab, but if there's a better way, I want to know.

Are y'all saying you take a knife and cut along the body where the legs meet it?
