Doing a Father's Day fish fry today. Which brings up the question... Mustard or no mustard on the fish?

I always did mustard on the filets and a cornmeal dredge. Worked well for me. I'm also from Monroe so some of these south Louisiana folks may have a better way to fry fish

I prefer a buttermilk bath, but the mustard ain't bad.

I mix mustard in beer and use that as a bath then batter.

Mix some seasoning in ice water , run fish through that then immediately through whatever breading ( I like corn meal) then immediately into hot grease , the ice bath then the quick transition to hot oil seems to make for a crispy crust

I use a mustard La hot sauce mix and then crispy Louisiana fish fry.

I do a egg and milk wash before breading my fish. Mustard is not bad either, but certainly dredge with something.

I put mustard in my seasoned egg wash. I don't care for a thick coating of mustard. Sometimes there is a layer of mustard that just doesn't seem to cook enough and gives off an overpowering mustard flavor IMO.
