I’m making your recipe from the cookbook with leftover smoked Turkey (made the stock with the carcas/scraps simmered all last night)

Roux is two beers deep now

Thanks bro, my family gave me that book years ago to start recording my favorite recipes. I have a few in it but really need to add to it. It's cool to add notes and make little variations, I use a pencil for ease of editing. Something to pass on.
