FD board help

I'll just start this off and say that I can't cook for shite. Going on family vacation and really want to redeem my self. Looking for unique yet relatively easy recipes for breakfast and lunch. Something with some wow factor that I can't F up?

Go through the recipe book in the stickied thread above. Lots of recipes there.
Look up muffalatta pasta on p 67. If you can chop and boil pasta, you can't mess it up. Good to have on hand for lunch or snacking.
Chicken salad works well. Google Helen Corbitt's recipe. It's great for a lunch meal.
There are tons of make the night before, bake the next morning breakfast casseroles out there.
Quiche also makes a good breakfast dish with fresh fruit. Easy.
Where are you going? If to the beach, you should consider seafood.
Feeding kids or picky eaters?

Going to the beach. All of my siblings cook etremely well. Like to make a decent showing

Honestly, vacation is a time for eating out.
The best cooks among us are handicapped inside a condo kitchen. The cookware, appliances, and layout can be a challenge. The ingredient list can be expensive unless you travel with a tub of them from your home pantry.
If you must, here are my suggestions...
Study egg cooking. YouTube is a good resource. Most people overcook eggs.
Get fresh ingredients. Use fresh herbs and vegetables.
Splurge on quality bread. Seek out a bakery.
Keep it simple. Do simple things perfectly.
Know your diners. Give the what they want. Don't try too hard to impress.

A good homemade pimento cheese on white bread is money this time of year. Use the leftovers on your grilled burgers.

We actually cook every meal at beach house. Trying to go out to eat with 30 people is a cluster uck. Because the fam cooks so well it's an event and they bring all of their special cooking gear with them

Do what I did for supper tonight. Slice cherry tomatoes, sweet (red yellow or orange) bell peppers, zucchini, brocolli, cauliflower, etc. Put all the veggies in a gallon ziploc and add some olive oil and rub from the outside to coat them well. Then spread them on a cookie sheet or roasting pan and season with salt and ground black pepper. Put them into a 300 degree oven for a while. I won't give an exact time. All ovens cook differently. Somewhere in the 20-30 minute range will do. While waiting on the veggies, boil some angel hair pasta with a dash of olive oil until nice and soft. Once the pasta is done, plate it and drizzle olive oil on it, then top with the roasted veggies. Top with shredded Parmesan, fresh if you can and more olive oil.
