Great smoker. I usually run mine with one or two closed bottom vents and just a small opening on the third vent. Top vent wide open. Don't want it to get too hot.

FBD for me is a cider. A few minutes ago I fired up the burner to start heating my strike water for a saison and a storm pops up radar. Looks like I'm powering back down to see how it goes. Fingers crossed.

You should test/calibrate the WSM thermometer, it could be off, I would trust the digital. Second the 225-235 on the temp at the grate.

Finally have had some talk of NewJersey/NewYork next year. Everyone pretty much thinks it will happen now and the organizing group got serious with some hires. Hope this shite happens because I will try to make it every year.
