I can remember getting the sausage eye poppers I think they were called on the menu for breakfast. Was one of my favorite breakfast stops.

Popeyes in Laplace still does breakfast. A few still do if I recall

Yep, they are good. The one in Natchez still serves breakfast.

I worked for a company that deliver to all the Popeyes across the SE US. I don't ever remember delivering stuff for cornbread. At the time we delivered biscuit batter to some stores and frozen biscuits to others. I don't think any stores are carrying biscuit batter and making their own biscuits anymore. Same thing with chicken strips.
