Looking for good recipe for some crawfish tails in the freezer

Use Otis' recipe. Someone post it... I'm out of pocket right now.

Hint: Sub two Popeyes biscuits as the binder for the filling.

Crawfish Pie

• 1 large chopped onion
• ¼ cup minced green onion
• 2 cloves minced garlic
• ½ cup chopped bell pepper
• 2 ribs chopped celery
• ½ cup of butter
• 1 beaten egg
• 1 cup of milk
• (2) 9-inch pie crusts
• ½ tsp each of black/red pepper
• 1 10 oz can cream of celery
• 4 tblsp tomato sauce
• 1 lb crawfish tails
• ¼ cup minced parsley
• ½ cup bread crumbs
• 1 tsp salt

1. Saute’ onion, green onion, garlic, bellpepper, and celery in butter

2. Add soup, tomatoe sauce, crawfish, and parsley.

3. Cook slowly 10-15 minutes.

4. Turn off heat.

5. Add bread crumbs, salt, black and red pepper, egg, and milk; mix well.

6. Pour into pie crusts ( thawed out for ½ hr) and bake at 350 degrees for 1 hour.

Makes 2 pies.

This is a good one. It's an adaptation of the recipe in Vernon Rogers' book. It seems to turn out better if you prep it while coked out of your gourd, wearing a diaper and getting a hand job from a hooker. Honest.

Crawfish Pie ( makes two deep dish pies)


Ingredients

1 lb good tails, about half coarse chopped
1 large onion, fine diced
1/2 bell pepper, FD
2 ribs celery, FD
3 cloves garlic, minced
1/2 cup butter
1 cup heavy cream
1/4 cup flat leaf parsley
1/3 cup green onions, minced
1/2 cups bread crumbs
2 eggs, in all
Salt, black and red pepper to taste, or, add Tony's until the salt is right, then a heavy pinch of red pepper
2 large, deep dish pie shells
2 roll out thin pie shells



Method


Melt the butter and sauté the onions over med low heat, adding the bell pepper and celery after @two minutes. When the onions are clear, add the garlic. Add the cream and crawfish and bring to a simmer. Then, simmer on low @ 3 or 4 minutes. Remove from the heat. Add the bread crumbs, green onion and parsley. stir well and season to taste.


Beat one large egg well. Add a T or two of the pie filling. Beat that in to temper the egg. Then whip the egg into the filling.

Pour up in the two deep shells. Top with a roll out pie shell. Baste with a bit of beaten egg mixedd with a T or two of water. Bake at 425 for 15 minutes, then 350 for 30 or so more. Pull, let it rest 15 minutes, then slice and enjoy.

I couldn't find what I posted, so I wrote this one up. It'll work.

And I'm serious about the blow, diaper and hooker. Dead serious.

Crawfish Pie

1/2 stick butter
3T flour

1 med yellow onion chopped fine
1/3 cup celery chopped fine
1/2 bell pepper chopped
2 cloves garlic pressed

2lbs crawfish tails with fat
1 1/4 cups chicken broth (1 can)
1 tsp salt
1/2 tsp cayenne pepper
2 tsp Worcestershire sauce
4 green onion tops

Melt butter, add flour. Make a blonde roux over med high heat. 10 min. Add onion, bell pepper, celery, and garlic. Cook until soft over med heat. 20 min. Add crawfish, broth, salt, pepper(to taste), worcestershire, and green onions. Cover. Simmer on low 30 min. Stir often. Cool.

Cool.

After it's cool, pour into pie crust, and bake 425F for 20-30 min.

I loved his cooking segments, and the book, if you can find it, really is pretty damn good. Somewhat basic, and he used shortcuts, but there are many good recipes in it.

Mini fillo crawfish pie recipe that was posted here a while back

Add the onions, bell peppers, celery, salt, black pepper, bay leaf, and cayenne pepper. Cook the mixture, while stirring, until golden brown. Add the tomatoes and cream to the mixture and cook for 25 minutes, while stirring.

Add the crawfish and allow to simmer for two minutes before removing the pan from the heat. Refrigerate over night.

Spoon the mixture into pie shells and cook at 375 for one hour. ( i baked for only 20 minutes and it was good to go, hot and crispy)
