Clarified Butter "Ghee"

you can prepare ghee fairly simply at home.

I believe that Whole Foods sells it, but definitely International Stores should have it.

Clarified cutter is equal parts margarine and unsalted butter, cooked until all the bubbles boil out and its a deep yellow/ transparent liquid.

Similar to Drawn Butter, except with drawn butter you use salted butter and don't boil the butter all the way down.

I use to have to make this by the ton when I worked as a line cook.

I've bought it at Whole Foods, but it's very easy to make it yourself. Store bought, it's pretty expensive.

In Metairie, they have it at the International Market (that's the name of it) just off Cleary between Vets and I-10.

I have never heard of it containing margarine.

I thought you just took a pound of butter boiled reduced heat and its strained after the second foam forms.

The margarine allows it to stay a liquid longer at room temperatures, I'm sure it truly neither adds to it or takes away from it, just helps it out chemically.

IDK, even the store bought stuff says "Butter, Vegetable Oil....... But I just saw the OP was about a stranger India - based clarified butter, I'm not sure of that one. I just know how to make clarified butter.
