Can you freeze fresh herbs?

I do it. I haven't noticed any deleterious effects in respect of taste, etc.

Yes. The texture obviously changes. You can freeze in water or olive oil. Most suggestions are to freeze in olive oil ice cubes. Some herbs can be dried and crumbled for future use.

Sometimes, I grind fresh rosemary, put it in a ziplock bag in the fridge and use it from there.

If you have a lot of basil, you can make pesto and freeze that.

I have rinsed basil and oregano. Let dry on a paper towel. Transfer to a new paper towel. Fold it over and put in ziplock and then freeze. You lose the texture but the flavor is still there.

If you have the stems, you can put them in water and root them. I usually put them in glass jars on the windowsill. I've planted them before, but I usually just keep using them. The basil will grow more leaves. I've kept it fresh for weeks that way when I have a big bunch of it.

How long does it keep in the refrigerator?

Basil doesn't keep well in the fridge in my experience, at least not what I pick in the yard. The store bought starts going bad as soon as you open the plastic container. I find that it starts to wilt and then turns black.

Rosemary will keep in the fridge, but air exposure will also cause the needles to dry.

Sometimes, when I have fresh picked or grocery store basil with stems, I put it in the glass jar in the window with a ziploc bag over the top like a greenhouse effect, somewhat. I read it somewhere and it also works.

Both came from neighbors garden and I have some in jars now on windowsill. May just plant some myself.

I've decided that fresh herbs do well for an extended of time.

I'm planting in pots on my deck next weekend. Nothing beats picking them and bringing them straight inside to use.

Both basil and rosemary plants are pretty much impossible to kill too.

Basil is not really easy to maintain. You have to clip the flowers in the top to keep it going and even then it's pretty wimpy. Mint and rosemary could live thru a nuclear attack

I've had mint in pots die on me. Lost a few rosemary bushes also. Never figured out why. They were beautiful one day and dead the next few days, completely brown and crispy.

I let one plant bloom and now have basil growing in every nook and cranny that the seeds could find a foot hold. it grows like kudzu! I haven't planted basil in three years yet I get plenty each year.
