Can any of you do the one hand one tap egg crack into pan?

I'm talking about banging it on the counter using one hand and that crack propagates horizontally around the center of the egg, so you just have to spread the shells and drop the contents into the pan?

Is this feat the mark of a true kitchen master?

The one handed crack is easy to learn. But I think it's safe to say no one on this board is a true 'kitchen 'master.'

I'm the same way. Cracking an egg with one hand is second nature to me. When I try with two, the result is a disaster.

No, I do not think this is a mark of a kitchen master. Just a sign that I've cracked a lot of eggs.

Agreed. I turn straight up handicapped if I try cracking one with two hands.

Yes. What makes is work is a solid but not too hard hit on the counter, and they key is your knuckle serving as the fulcrum for the break. Thumb and finger are your guides to open the egg. Once you get the feel of it, it's quite simple.

Difficult to say. I don't think it will take you that long. Getting the feel of the strength of the crack is the difficult part. Too hard leaves you with a mess in your hands, but too soft will not give the cylindrical crack that you are looking for. You want to see it extend at least 25% of the circumference of the egg (that's my rough estimate... could be less)
