I need to do this tomorrow. What is your favorite recipe?

Taco seasoning with a little water and shred it when it's done. Sandwiches or tacos.

I made that during my LSU days; it was a decent, inexpensive meal when I was in a pinch. Bought tortillas, pico de gallo, cilantro, and shredded a block of cheese; voila, tacos.

Although I recommend using boneless thighs.

This was already my fall back option if I didn't come up with something better. I do tacos too often.

Season the chicken with chili powder, pour in half a small bottle of lea and parrains, and a bottle of Kraft BBQ sauce. Cook on low for 2-3 hours. It makes it's own gravy. Serve over mashed potatoes.

My mom made that on Sundays.

I'm a little more discerning now. :)

Put a diced an onion, Chicken rubbed with your favorite bbq rub, some barqs root beer, and bbq sauce. Shred when done and you have shredded bbq chicken for sandwiches or whatever else. This is originally supposed to be for easy pulled pork but I tried it with chicken and it was good as well.

Ingredients
Nonstick cooking spray
3 pounds chicken thighs, skinned
1 (1/2 of a 2.2-ounce package) envelope beefy onion soup mix
2 cups quartered fresh mushrooms
1 1/2 cups frozen small whole onions
3 medium carrots, cut into 31/2-inch sticks
1/2 cup dry red wine
Hot cooked mashed potatoes (optional)
Snipped fresh parsley (optional)

Directions
Lightly coat an unheated large skillet with cooking spray. Preheat skillet over medium heat. Cook chicken thighs, several at a time, in the hot skillet until brown. Drain off fat.
Place chicken thighs in a 3 1/2- or 4-quart slow cooker. Sprinkle with dry soup mix. Add mushrooms, onions, and carrots. Pour wine over all.
Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. If desired, serve with mashed potatoes and sprinkle with parsley.

This doesn't look bad, and it isn't Southwest.. if you're trying to steer from those flavors.

yes, but with boneless thighs. We use chicken broth with the water as well! You can make almost any meal out of this.
