That is a good question. I'm coming around to thinking a bit differently.
It appears that they chose places that are long time community staples.

Bourdain's Layover episode did it right. He pretty much completely avoided the FQ. That was a great episode.

But I understand what Zimmern was trying to do here. Send the masses, not necessarily foodies to the "staples" if they are only here a few days. Cafe du Monde will make an Iowa farm wife happy when she comes to visit.

This guy did too, I think. They were with Link's coonass family for a day or two. That show was years ago.

yea Zimmern ate boudin and hog stomach with him at Donald's house. He also went to Vaughn's, dooky chase, & the vietnamese markets in the east.

he went frogging on the episode but not with link.

Yeah, it's close, but Mother's also uses cabbage instead of lettuce.
