It's not as fancy as you are probably looking for but I like the Tuscan Ceaser kale salad form the salad bar at Whole Foods.
Remember when that Yankee liberal a few years back said you couldn't find kale in New Orleans.

Broken Egg in Lakeview has a kickass kale and salmon salad.

Satsuma on Dauphine. I consider myself a connoisseur of kale salads too.

I dont know if it is a salad per se, it is to me, but the kale preparation at Domenica is always very good. It has seen a few iterations, but normally wood roasted kale dressed with lemon, olive oil, and parm. Maybe a little bit of anchovy also.

That kale salad DIY bag at CostCo in the cold produce department.

Kale has more iron that a steak.. and if it's used as a salad green, it stays more fresh and firm than lettuce or that flimsy "spring mix" garbage.
