It is Jacobs in Laplace. It's far and above everything else I have tried.

To be fair I haven't tried Don's in Reserve. But after seeing all the support they're getting in this thread I might have to give them a try soon.

Cochon has started to package their andouille. I've seen it at rouses. I thought it was pretty solid but I'm not an expert on andouille as I like smoked sausage better.

Please tell me the differences between Baileys and Jacobs in your experience. I know I did not like Wayne Jacobs when I tried it at a friends.

I may just be partial or wired to Dons as it takes me back as I'm from Reserve, but to me the flavor is perfect, the consistency is perfect and the smoking is perfect. I found Jacobs/baileys to have less taste and more fat/tougher. I do not cook gumbo or jambalaya if I don't have sausage and aundoulle from reserve. My mom stocks me up when she visits.

In Shreveport/Bossier there are only 2 options. All of the grocery store stuff is crap.

Best: Maxwell's on Line Avenue in Sport.
Second Best: Bergeron's on Benton Rd. in Bossier.

Jacob's uses pecan wood only. I find the smoke flavor to be second to none. I find it to be leaner that Bailey's....no big fat chunks.

Being from Laplace and now living in Baton Rouge I've tried tons of brands of andouille (Jacobs, Wayne Jacobs, dons, Verons, manda, Richards, etc)

The best is by far Don's in Reserve.... It's just perfect.... Not too much fat, great taste, and actually breaks down in a gumbo so it's not rubbery.

Jacobs is good but I don't find it breaks down as well.

Don's also makes damn good smoked sausage... I always grab a few packs to make red beans with.
