I like Don's smoked sausage best (it's all beef). I've always used Wayne Jacobs Andouille, but I'll have to try Dons. I've grown accustomed to the size and texture of WJ's Andouille.
Wayne Jacobs doesn't use pecan (says it's too strong) and doesn't put preservatives in the meat. Jacobs uses pecan I'm told and also adds preservatives. I'll have to ask about Dons next time I'm in there.

No one likes Comeaux's? It is the only thing I can find in DFW that I don't hate. Richard's and Savoie's are both marginal at best. La Boucherie is ok.. I find it at Tom Thumb sometimes. They just want way too much for their meat.
