Put them over an open flame and char them until the skin is black on all sides. Then put into a bowl and cover with saran wrap and let them steam for a few minutes. Then shake the bowl to remove most of the charred skin. Take out and remove any other charred skin left. Core and remove seeds then slice into strips. Do not rinse under water. Then put in a bowl and add two or three cloves of garlic minced, kosher salt and good olive oil and toss to coat well.

Serve on a good cracker as an appetizer or finger food.

I would not use the green bell pepper in this. Only the yellow, orange and red. The red is the sweetest and the green is just too much.

While this thread is off topic, anybody have a link or a recipe to a good boudin stuffed bell pepper. Search and google failed me so I'll just wing it if the chefs on here can't point me in the right direction.

Oh and roasted red bellpeppers can go in just about every damn dish I make as far as I'm concerned.

I rarely buy green unless I'm cooking in bulk.

Tell them to suck it, and just sauté them with garlic and oil and some seasonings.
When I get fajitas at restaurants, I eat all the peppers and onions immediately. YUM.
