Bell pepper side dish recipe?

i have red, green, yellow, and orange. want something simple. no stuffed peppers. help!

slice em up and add some baby corn. saute with salt, pepper, a little garlic and balsamic.

Never tried to use bell peppers as a stand alone side dish, but I will give it a thunk for a while and see what pops up.

Italian Sausages and Angel Hair Pesto Pasta
Get a pound of Italian sausage and brown them, all the way around..
Once they're browned, add 1/2 cup of water, the bellpeppers, one sliced onion and some chopped garlic and cover the sausages and peppers and cook on a med fire till the peppers are wilted.
Boil some angel hair pasta and add pesto.

If you don't like Italian sausages, you can do the same recipe with chicken breasts..

sliced zucchini, diced onion, corn, diced green and orange and red( you can also add sliced mushrooms). Saute in order onion til starting to reach tanslucent, add zucchini and peppers, then when Zucch starts to appear tanslucent add corn. Then cover and let simmer til corn is done. Season with s&p, and cumin to taste.

Roast them. Clean and cut into thick strips, brush with olive oil and roast in a 450 degree oven. Add S&P, if you wish. Wouldn't be my favorite side, but it's simple if that's what you're after.
I'd make a roasted bell pepper soup, myself, or use them to hold another side, slicing them in half and loading them with creamed spinach or roasted broc and cauliflower.

and i know this seems like a weird thing, but i just LOVE bell peppers. and it has to be simple bc the people i'm cooking for are super picky and weird about food

Plain old roasted might be just fine with the brisket and the folks for whom you're cooking.
You could make sort of a rainbow bell pepper rice. Saute the bell pepper in some butter. Cook the rice in chicken stock. You could throw in some onions with the peppers. Pretty simple rice dish.

I sometimes slice peppers, onion, and mushrooms and saute them together with some soy sauce or worsterchire sauce for a topping or side with steak. (Yes, I said topping for steak--gasp!)

1. Julienne the peppers and a red onion. Julienne means same sized strips.
2. Put a saute pan or skillet on medium high heat.
3. Add one TBSP(tablespoon) of olive oil and TBSP of butter.
4. Let all the butter melt in the oil.
5. Add onion and pepper mixture.
6. Stir to coat in the oil and butter.
7. Add 2-tsps of salt and 1-tsp of pepper. tsp means teaspoon.
8. Stir and add 2-tsps of Italian Seasoning.
9. Stir and cook for 5 minutes, stirring every minute or so.
10. Add 1/2 cup of red wine vinegar. Stir.
11. Let the vinegar boil and "reduce" for about 2-3 minutes. Stir remove from heat.
12. ENJOY!!!!!!!!!!!!
