Going to be in Denver monday and tuesday. Any can't miss places for beer, either breweries or bars/tap rooms?

Here's what I'm going to say -- there are suggestions from someone I trust, then there's what I'd do. I'd follow the former.
No bullshite aside, I would do this. I'd try it.
Crooked Stave -- both agree it's excellent
Stoney's for sports bar -- personally idk, but he says it's good and he drinks great beer so I'd go there if I were traveling there
Mr. B's to purchase -- same as previous
Great Divide, which gives access to River North and Falling Rock -- as far as tours -- tours are fun, and to be fair, you've done one, you've done them all. but 8th says it's a good one with immediate access to other locals, so I'd do it
I'm skipping Breckenridge because their beers suck. He said it, I agree. Breckenridge is booty. I might show up with more as I recall, but I'd go with what 8th says/what I've regurgitated. he lives there and knows his shite.
ETA: Another reliable poster says Funkwerks is legit. Worth checking out. He knows beer

Yezzy is spot on. All those places are within walking distance of each other in LODO...or Coots Field area. Funkwerks is in Ft Collins....bout 45 minutes from Denver.

Assuming you are staying downtown and here for work with no car...
You could take the light rail out to Golden and enjoy a delicious light lager at the world's largest brewery... I can get you on the vip tour, it's just like the regular tour but takes needlessly longer. Golden has 3 other great breweries in Cannonball Creek, Mountain Toad, and Golden City Brewing. Cannonball Creek is making the best ipa in the state right now plus if the weather is nice you can sit on the patio surrounded by hop plants and drink beer with professional bike riders and watch the paragliders on Lookout Mtn.
Downtown you should go to Great Divides new barrel room. They spent like 8 million on a brand new brewery but kept the tap room just as small as the original, it seats 6(actually about 30 but still). Across the street from that is The Source which has Crooked Staves tap room. Then make your way back downtown by hitting River North and Falling Rock(arguably the best beer bar in America). Epic is real close to Crooked Stave but unless you want to hop a fence it'll take about a mile walk to get to but it's worth going. Mockery and Black Shirt are right there also and worth having a beer or two at. You can walk or rent a bike for all of that. Other downtown options are Freshcraft, Lucky Pie and Euclid Hall. They all have food. Biker Jims for a great hot dog.
Over by the capital is Cheeky Monk and Denver Bicycle Cafe. Both are good. Across I-25 is Prost and Hogs Head which are both unique and fantastic, Prost has my favorite patio in the city. Hops and pie is a little further but worth it and will require about a $15 cab ride each way. Masterpiece Deli has great sandwiches and will deliver to Prost. Amatos ale house is alright also.
If you have time and a car you can get caught up in the whole Boulder( Avery, Backcountry Pizza, and Upslope) to Longmont(Oskar Blues and Left Hand) to Ft Collins(Odell, New Belgium, Funkwerks, Old Major) thing but if you have a car and time you should go to the mtns.
If you're staying in another part of town let me know and I'll amend.
I hate Breckenridge's beers but they just opened a beautiful new brewery and restaurant south of town near me which is worth hitting up, there are several good breweries near by I can recommend if you go. I live in between there and the tech center so let me know if you are staying there.

^^^ Blue Moon is brewed in Golden at the big brewery. They may claim otherwise but they are lying. The Sandlot Brewery in the park pretty much only makes beer for the park. I think they have a grand total of 4 people that work at Sandlot. They are opening a Blue Moon tap room/brewery(that still won't make blue moon) over in Rino by Crooked Stave and Great Divide. Also New Belgium is putting a small brewery in to a hotel going up next to Crooked Stave, well next to The Source. Crooked Stave also does all of its brewing in a warehouse off of Pecos if they are brewing yet. They have always had someone else (Prost or Epic) brew their base beer then they take it to their place and age/ferment it in different things. NB is going to have a roof top tap room/bar that should be pretty nice.
If you are a home brewer who aspires to open your own place you should check out Wits End. The owner was a home brewer who decided to open a brewery in a storage unit. He started off with a one barrel system and was open like 12 hrs a week. He's one of the nicest guys you'll ever meet and the whole experience makes you feel good.

I think I posted this before, but Crooked Stave is distributed to Portland because the owner of Hop and Vine in Portland is shacking up with the owner of Crooked Stave. I don't think they are married, but they have children together.

I would just skip stony's rest is right on point.
My favorite brewery of the moment is renegade. I really like their beers. Epic is pretty damn good too. Strange craft has an awesome vibe, strange location and fab food trucks. But the beers are just OK. Fun crowd too.
And yes, breck's beers are meh.
