Once you get the routine down it really doesn't take long. More boring since you prep then wait a month to 10 months.
I did for the first time this year! Finally. And my god it almost tasted like straight bourbon. Wasn't what I was expecting. Was ok.

December. Sure as hell hope it builds a good rind. If i fricked up and contaminated the inside and it looks like the outside I'll be pissed.

I've made my own mozzarella... super easy and was delicious, but I've never messed with anything that requires aging.
