im not italian and i dont always make fresh pasta, but it is very easy and really pays off. hard to beat fresh papparadelle with bolognese a shite load of fresh ricotta and fresh herbs, one of my favorite dishes in the world. homemade ravioli/agnolotti is hard to beat as well

Not Italian at all, but I make fresh pasta. Dough comes together in less than a minute in the food processor, it rests for abt 1/2 hr to relax, then it is easily rolled w stand mixer pasta roller attachments.
