I know the steel gauge on the hood of the grills arent very reliable, so what are some good recommendations for monitoring the temp on the inside of the grill for smoking?

I use this guy - Maverick wireless dual-probe thermometer. Check the smoker temp and the meat internal temp at the same time.

Smoking meat forums usually has a discount code to the website that sells amnps for Maverick probes. Usually a good bit cheaper than amazon.

x 2 ... simple and wireless. Been using mine for 3-4 yrs and very pleased. If and when it craps out, will buy another Maverick updated model

Thermoworks smoke is a good one... they make some others but are a tad more pricey.
