You want him to have a traditional NO poboy but then say you will go to a gas station and get one.
That's like going to Japan wanting ramen, then stopping at a 7/11 there and eating cup noodles.
Go to Parkway Bakery. Shrimp poboy.

I disagree

I'm from the east. There are pretty good poboys at those gas stations. Good food doesn't always have to come from a b&m

The last time I ate bbq shrimp at Pascal's Manale the sauce was nothing but oil with very little seasoning. I ate two and just couldn't take eating any more oil. The shrimp were beautiful and cooked perfectly, though. Mr B's are superior by miles and miles.
I had a great oyster poboy at Joey K's. Haven't eaten anything else there, though. I have no idea whether they serve gumbo there or if they do, whether it's good. There aren't a lot of places with gumbo and poboys or maybe good gumbo and poboys. Maybe Liuzza's?

K-Paul's lunch menu would work for both. Have not had the gumbo in years, but the shrimp poboy is pretty good and you can walk there.

I'm personally not a big fan of Parkway, but that's probably because I'm a roast beef guy and theirs isn't very good.

I can see why you recommended it, because they have decent poboys and decent gumbo. Just wouldn't go out of my way for either one. You're probably right, though -- it's probably the best option if he wants both together.
