I have a bunch of leftover green onion. I've seen recipes for fried green onions or side dishes with sautéed green onion.

Anyone have any recipes or other ideas?

Grill them whole. Chop and use in eggs, stuffed potatoes, anything, really. I love them.

Chop fine a half dozen of the white bottoms. Sauté' them in a little oil or butter till almost brown. Add to a pint of sour cream, 1/2 cup mayo, a minced clove of garlic, and the finely chopped onion tops. Mix, then return most to the sour cream container. Put that in the fridge. Eat the rest.

Make a vinaigrette in the blender. Great over a grilled salad or grilled vegetables.

I've made Paul Prudhomme's green onion dressing, but the one in his book which doesn't use the Magic blends. It's good.
