Butternut squash ideas

What are some of your favorite ways to prepare butternut squash, OTHER than soup? I love it but I'm getting tired of soup. Thanks!

Cube it (1" cubes) and toss with Olive Oil, salt, pepper, fresh thyme and a little balsamic vinegar and roast at 425 until it's done (20-30 minutes).

We cube it and roast it, too, but my husband has been adding cumin and cinnamon and Penzey's sweet curry powder. C'est bon!
OK, part of that is a lie. I don't cube it. I buy it from Albertson's already cubed. And the "we" is a lie, too. My husband does it.

Another vote for roasted. As others have suggested, you can season the squash with a variety of seasonings...savory, sweet or a mixture of both.
You can treat it somewhat like a potato and make twice baked or mashed. I've seen it mixed with pasta, as well, though I don't care for those two textures together.

I like to cut them in half, scoop out the seeds. Sprinkle with nutmeg, cinnamon, allspice. Put a pat of butter and a sprinkle of brown sugar in the hole and finish with raisins or cranraisins and some breadcrumbs.
Then bake until done.

This. We are doing this tonight actually. I find smaller cubes are more enjoyable. 1cm cubes probably (as compared the the 1in suggestion).

Put a cup of dry white wine in with the cubed butternut squash when making the risotto. Makes a nice difference.

Veggie curry or black bean and roasted butternut squash burrito.
Domenica has a pizza with a puréed carrot base. Could do same with the squash.

Sautee with some Zucchini, then mix with some roasted tomatoes, black beans and brown rice, etc

Cut butternut squash in half, roast it up and add stuffing in the middle. I used quiona, vegetables, mushrooms and spices (and cheese when I still consumed dairy). You could add ground meat or anything you prefer.
I cooked the stuffing seperately then stuffed when the squash was ready.
Or roasted butternut with your preference of butter and cinnamon.
