What to do with left over hamburger meat? Meat loaf?

We had meatloaf the other night. Had not made one in several months. Was tasty and the meatloaf sandwiches the next day were nice.
We often just cook extra with onions added as loose meat and put it in the freezer in two serving zip lock bags. Use it later for tacos, sloppy joes, taco soup, spaghetti sauce, whatever. I like it on a slider with mustard and dill pickles. If it is frozen precooked, you can turn it into something simple you will probably like quickly.

Freeze in half pound portions if you don't want to use it right away.

Brown it down with onion and seasoning in ya black iron pot. pull it to one side tip the pot a lil and remove some of the heart burn from the pot(grease) add some water and lots of bell pepper and green onion and some garlic and such. Let it simmer a bit then either add ya water and rice ad make it into a jambalaya or the lazy wat pour it into a rice pot add water and rice and hit the button.
Po folks call it either ground meat or bell pepper jambalaya.
Some folks call it dirty rice but it aint dirty rice is made with cooked rice Jambalaya the rice is cooked in.
