Middendorf's Catfish

Brought my kids Sunday. Have not been in years. That thin catfish is so damn good. My son asked me how do they get it that thin. I was told years ago that its frozen first then cut thin. Has anyone tried to duplicate with success? Duplicate as far as finished product.

So good and the new owner has really taken the place to a new level but also keeping the great fish. No idea if thats how it's made though

I've sliced partially frozen catfish pretty thin. Can't claim that it was just like Middendorf's, but good.

Its sliced super thin and probably just cornmeal with a little salt and pepper.

I'm not a fan of the thin catfish. The only times we go to Middendorf's is when family is in from North LA. I always leave thinking all I've eaten was batter.
They do make a damn fine hush puppy though,

Love the thin cut. Like eating potato chips made out of fish.
Matherne's on Bluebonnet sells Middendorf's catfish in their frozen seafood section. Put them in a bowl of ice water, shake in Chef KD's Fishfry mix and into very hot peanut oil (375). Take out almost immediately. Pretty darn close to what you get in the restaurant.

They are sliced thin fresh, not frozen. Super sharp knife, with blade parallel to cutting surface and filet layed flat. Left hand on top of filet, right hand slicing super this slices. Takes a little practice but not that hard. I do it all the time. The ladies in that kitchen could do it in their sleep.

There's a video on NOLA.com where he shows how it's done. The slices are soaked in salt water for a bit before frying.

I understand Middendorfs is about to undergo major renovations as well as raise the original dining room to prevent flooding. I believe the old dining room will close next week.

I loved the stuff many years ago. Last 2 times I went you could not see any fish in the batter. I love thin cut catfish, but this was ridiculous.

John`s grocery store in Watson has thin cut catfish they cook and call it Middendorf`s catfish. They may only do it on Friday`s.
Its good, but I can`t compare it since I`ve only eaten each one once.
