for the 1st one, the moment the door opens to see Maul looking down, and Duel of Fates music hits. gives me chills everytime i see it.
for the 2nd - Mace decapitating Jango and giving Dooku the look like - Yeah Mutha-fricka what now
3rd one, by far the Obiwan and Anikan fight

I : Darth Maul
II : uhh ... I got nothin'. Sorry. I will make up for it by putting 2 for III.
III: Natalie Portman looked fine as hell in that little nightgown. Bad-arse light saber battle between Anakin and Obi Wan.

After watching Clone Wars, Episode 3 posses me off even more. It's absurd that Disney could provide a way to show Anakins motivation for his distrust in ep3 in a freaking cartoon. And do it well. By the end of Clone Wars, you kinda get his apprehension.
That's armchair QBing to the max, but dammit if Lucas would've paid attention he could've drafted a truly tragic tale.
I really hope Ashoka shows up in one of the live action movies. She's such a good character.

In all seriousness, those films would have been better with cardboard cutouts of Anakin and Padme. (And we know for a fact that Portman can act, so the blame clearly lies elsewhere - looking real hard at you Mr. Lucas.)
I think it's because Lucas would constantly change shite in post production. Mcgregor has a story of watching the film and seeing himself say lines he never said. He later found out Lucas had combined 3 or 4 different takes, with different dialogue, in one long shot with cgi to cover the edits. Here's a small example
Watch Anakins head morph
Relevant video: LINK Around the 47 minute mark the editor says "well maybe you got what you wanted there you got the george directing in the editing room, which is what he...loves to do...just change the actors performances."

1 has lots of good stuff. Darth Maul, the Duel of the Fates, and the podrace are all great elements.
2... God, it's horrible. Ummm... John Williams always brings it. So, the music.
3 has some decent acting from Ewan McGregor, holding the whole ridiculous plot and lack of characterization together. He makes the movie work.

Episode III was a good film. Not as good as the OT, but if the prequels had started with Episode III, I think we could have had a good trilogy.

Episode 1 - The music? Yeah the music was good.
Episode 2 - Was terrible the first watch, but gets better with each watch. There is a ton of storyline knowledge in this movie that helps connect the dots. I feel like I pick up on something new every time I see it. Episodes 1 and 3 didn't have near the storytelling value that 2 did. The only prequel with rewatch value.
Episode 3 - Was a great movie the first watch. Lightsabre battles were good. Problem is there is absolutely no reason to watch it a 2nd time. There's nothing hidden to find in multiple viewings.

Makes me think back to Ebert's review of TPM. He said something like "look, its Star Wars so its cool."

Episode I: The Naboo N-1 Starfighter. I just really like it's design.
Episode II: The obvious is Natalie Portman's midriff and the white suit in general as others have mentioned. I didn't like what Lucas did with Jango Fett (pandering to Boba Fett fans and making him the genetic basis for the clones), but I thought the battle between him and Obi Wan on Kamino was nicely done. Plus, the space battle in the asteroids was kinda neat too.
Episode III: The spatula/ice cream scoop handed baby-delivery droid was hilarious! But I'll have to agree with the other posters who said the opening space battle.
Also, I did like the audio effects for the different engine noises throughout the prequels .

Episode 1- Darth Maul
Darth Maul was awesome and anyone who says otherwise wasn't a kid when those movies came out. He was awesome. I saw Phantom Menace 5 times in theaters and I was so excited for Star Wars. Qui Gon was awesome as well.
Every single other aspect of that trilogy sucked dick and every minute of it got worse culminating in the Noooooooooo worst movie scene in history.
But damn, Darth Maul was awesome.

Coruscant was awesome and seeing the Galactic Republic pre Palpatine and Vader was very interesting.
