To move matters forward, I would think she needs proof of your dog's barking excessively or at late hours (video with audio). If you're certain your pup isn't offending as she alleges, then you should be ok.
It may be a nice gesture to get to know her and ask her to contact you immediately if she thinks your dog is barking. It may not even be your dog and she just thinks it is. You'll catch more flies with honey than vinegar and you just may be surprised what a little kindness may get you.
I have an old lady neighbor I immediately befriended when I moved in to my house because I know while I'm not home, she watches my house like a hawk and will contact me if anything weird happens.

They do serve a purpose. Neighborhoods without HOAs can get pretty sketchy fast.

I can definitely see this issue, too. My guy stays inside all day while I'm out. I don't think he's barking, but periodically I do ask my neighbors if they hear him just to be a good neighbor because a barking neighbor dog with an oblivious (not malicious) owner is terrible.

That's not what the OP described, and if it were, that's not good enough, because the implication is that you leave it outside during the day while you're not there. Regularly leaving a dog outside that barks constantly at any time of day or night is not acceptable.

I have done this exact thing. Also set up laptop webcam to ensure she doesn't bark. She sleeps on the couch all day that's it.
My main issue is it specifically states "late into the night and early morning"
She is at the foot of my bed from 11pm-8am. She doesn't make a single sound besides snoring

Well then you definitely have nothing to worry about, she can't really do any harm without proof that it's your dog. Be nice to her, let her meet your dog, show her the video of her sleeping on your couch during the day. Assure her if she's hearing barking late at night/early morning it's not your girl.

This. If you live in a neighborhood don't have a dog period. Much less keep lab inside. That's like torture. Labs aren't bad barkers so I believe you yet youre a selfish prick for having a dog in a neighborhood and also locking a lab inside and in a neighborhood.

If her sleeping habits are outside of the normal daily routine of things she needs to adjust to it.
Things would be a bit different if the dog barked all night, that would be your issue but since thats not the case maybe offer a bit of advice for her to run a fan or small blower to muffle the sounds outside while providing a calming constant noise that helps you sleep?

If that doesn't work, save her notes she leaves by the door and let them pile up. She'll get the hint that you aren't reading them and DGaF.

true, you should also have to turn in a bathroom request chit for every time you may also have to have a bowel movement and let them know if too much TP was used.
