Unique Breakfast Ideas?

We have a family reunion the first week of June at the beach. I'm on breakfast detail this year. Looking for some unique breakfast suggestions other than the basics. The jambalaya Benedict thread got me curious if any FDB have some good ideas. A couple I'm thinking is biscuits and boudin in a casserole drizzled with Steens. Half avocado with egg in center then baked.

The month's issue of Southern Living has an article about unique twists on bacon, eggs and grits. Lots of good ideas.

Make Boss's boudin king cake. Serve with scrambled or fried eggs.
Breakfast burritos or tacos.
French toast, stuffed or not.
I would have fresh fruit available each morning with whatever you serve since it's going to be summer.
There are many breakfast casserole recipes out there with tomatoes and other good ingredients, most of which can be put together the night before and baked the next morning.
Various quiches.
Frittatas.
One of my favorite breakfast meals was when my Dad would take the day old donuts, split them, butter them and toast them in the oven for Monday morning. We had bacon and eggs and those. So good.
Breakfast burritos or tacos.

I must be the only person who left off the Steens when I had the boudin king cake. I tried it, but I liked it so much better just savory.
If you do a benedict or something else with poached eggs, pre-poach them and keep them in a container. When it is time to serve them, put them in warm/hot water while assembling the rest of the dish. This is how restaurants do it and it keeps you from having to poach eggs for a ton of people in the morning.

Crawfish scrambled eggs
Saute onions and bellpapper in butter.
Add a little cooked white rice, then some crawfish tails.
Add eggs and cajun seasoning.
Heaven

This past weekend I made pancake mix French toast with bacon infused syrup
Take your pancake batter and bake it until it is golden brown(it will rise). Take it out, slice it up, and treat it like regular bread.
Chop up a few slices of bacon and cook it. In another pan, mix water, brown sugar, and white sugar. Reduce to a syrup and add bacon about mid way.
