Things that came to mind while facing that goodness:
--Killing pigs is a noble profession.
--I would eat it BLT style (and maybe with a fried egg on top, but I would have to put on my Buddy Holly hipster glasses on to eat it).
--Drain some of that fat off, add some pork stock and some rice and stick it back in the oven to cook to make sort of a pork belly jambalaya.
--Grab a couple of fists full and run.
--Eat it with a side of pancakes and fig preserves.
--And
is very appropriate.

It was braised, then cut and baked in the braising liquid and it's own juices/fat.

That looks horrible. What was the eating plan for that? I love pork belly in general, but you've got to crisp it up at least a little. Ugh.

a lot of times you can get em from mexican meat markets like the one on florida.
I get them most of the time from whole foods.
