no love for white beans/rice

white beans and rice are a staple down here, but it seems like no one outside of terrebonne/lafourche even acknowledges the dish. what gives?

i cant imagine a good shrimp jambalaya or fried fish without white beans

I like em cooked with sausage or tasso and served with rice, or throw em in pasta, with garlic, parsley and parmesan cheese.. and olive oil on top.

Red beans are certainly more common where I'm from (St. Martin) but I love me some white beans...

I like white beans, but not with rice. I have an issue with the textures of bean and rice when together. Love red beans, but not with rice. I'll eat a little rice with the red bean gravy over it, but not the beans.

Growing up it was red beans for us. Had white beans for the first time and it was an epiphany.

I cook the white bigger beans. We called them butter beans growing up. Try some with a ham steak or fried pork chop. I'll take them over red beans all day long.....

I'm the same way. Cooked a pot of both at my last group camping trip. Had a bunch of Californians asking for the recipe. I was pleasantly shocked.

I just made some white beans two days ago in a different way... boiled a cup of dried beans till soft, then put in a blender with cumin and lots of hot peppers from the garden. Stuck it in the fridge as a spread for making sammiches, nachos or tortilla wraps.

For me, it's simply because if I have red beans to eat with rice, why would I use the white beans?

It's like choosing to eat a hamburger when you could have a Porterhouse.
