Well, aren't you not supposed to mix them?
Different cook times and all.
At least not mix chicken and beef. I feel like veggies on a beef one won't get cooked enough to my liking either.
I could mix veggies and chicken, I guess, but I never do.

I am not a shish kabob fan, but you can do veggies on a different stick and grab you a stick of each. I take them all off the stick before I eat them anyway.
I agree.. I am not a huge fan of the idea of kabobs either though.

I've never understood kabobs. The meat cooks quickly and tends to get overdone easily without much sear and the veggies never cook enough for my taste when on the same sticks with the meat. Cook at steak or chicken and grill some veggies separately and you have the same thing, prepared better. I take the meat and veggies off the kabob as well, before eating them.

I guess it looks nice but yes, completely impractical. You can either have a raw onion and pepper and med. rare piece of beef, or cooked onions and peppers with charcoal.
I do the meat and assorted vegetables on separate skewers. I like to to them because they are fun and you can get a nice char on all sides with a lot of grill flavor. But in the end they all get pulled off and put on a plate anyway.

Jones does chimichurri-marinated skirt steak at home, and it's delicious. I wouldn't want to cut it up and risk it being overcooked too easily.

They are called a Spiedini Maker and cost $100, and you can use vegetables, too.
