They are previously fried, then vacuum packed and frozen. I've had good luck reheating them in the oven at about 400 degrees. The crust comes out crunchy. You could also re-fry them I suppose. I've never tried, but I bet it would work fine.

ETA: They have pretty much everything in vacuum packed and frozen form that they sell hot. So I would show up with an ice chest.

I'm hesitant about putting anything frozen in grease. I'll reheat in the oven

Because Billy's is sitting right off the interstate?

Having just finished off my supply from Billy's, I think I will go with Best Stop next time, unless NuNu's opens a location closer to the interstate

I was lucky to have found venison and brisket sausage (in the same casing) with Steen's cane syrup the last time I was there.

I got best stop yesterday.... billys is good, but no way is it worth that line.
The best stop was really good by the way. I'm from acadia parish and i've found that it has taken a turn upwards as far as quality. Had 4 other vehicles in our group yesterday that agree with my statement.
Oh and for shite to get at Best stop... always get their andouille!

My dad still lives out that way, so i always stop at Billys and its by far the most consistent over there. But, when its 50 deep and 10 cars in line... Not stopping. Don's has gone the way of doing nothing but trying to make the hottest damn boudin available. Not as good as it was when he was in his carencro location only.
Billy has really good smoked sausage as well.
But, again best stop is not bad.... i think many people get turned off by the "liver" flavor you may get. Which is more traditional than basically straight pork

What is the consensus on Don's? I've stopped at Best Stop and Don's, and preferred Don's. I guess I need to stop at Billy's as well. Full disclosure, I'm from TN and don't know any better.

Don't do that they will fall apart. They cook fine as frozen and actually need to be frozen. I do it all the time. I have several bags of Tonys in my freezer and it specifically says keep frozen then drop into hot grease for about three or four minutes. Billy's the same way. Don't be scared it works.

I prefer Don's boudin. Billy's is great too but the casing is very tough, however they are always very consistent with their product. Don's and Best Stop have better cracklin by far. Hog head cheese, Best Stop. Boudin Balls, Billy's and it's not even close (don't get them if you are not going to eat them there/ASAP, that goes for any boudin ball). You can pass up Billy's and Don's, about a quarter mile south of the round a bout, is a little grocery named Early's. Boudin is outstanding and can compete with all three of the 'big boys'. With that being said Best Stop's boudin is good and anyone from TENN would love it.

***someone mentioned Don's boudin being hot ***

A little meat market on Hollywood St. named LeBlanc's, it's the hottest you'll find, not to mention VERY GOOD !

Heading to Lake Charles for work Wednesday, I'll stop @ Billy's for breakfast (1 boudin ball, 1 link of smoked boudin, 1/4# of cracklin, w/ a Gatorade). Always get some to bring to the plant as well. Stopping with the ice chest on the way home

Best Stop has the best smoked boudin. Sometimes it's a little too hot though.

MN, if you like andouille make that short trip to best stop after billys and pick up some. I stocked up with some frozen links to have for gumbo season. Always like to have some, tasso isn't bad either...

Powerman: there's nothing wrong with putting frozen into a fryer. Look at all the fast food places that do it.
Look at the frozen food aisle with frying instructions.

Hell, some foods you have to fry frozen just to keep them together.
