Mouton: Someone posted a black bean patty recipe recently that they kept boasting as the best they've ever had. I am trying to dig it up, but I really can't remember what the thread was even about. It was not very long ago.

For me the context of the convo was on vegetarianism. Of course eating more veggies and lowering your meat intake is healthy, to a point. I'm just failing to see what that question had to do in the context of the conversation. Unless of course it was just to explain why you were choosing to make a vegetarian recipe, even though you yourself are not vegetarian.

You could try textured vegetable protein or TVP. When reconstituted, it has the same texture as ground meat, but not a lot of taste. I would reconstitute it in water with Kitchen Bouquet mixed in it so that the color matches ground beef. You can get it at Whole Foods next to the packaged "exotic" grains.

I will have to give it a try. But in my experience, quinoa does not make for a very good patty. The texture is too crumbly and mushy. I have tried quinoa burgers at 3 or 4 restaurants recently and they all were disappointing.
