Next thing we know, someone will post Kale Pastalaya.

I don't know about pastalaya, but the same guy had a recipe for Kale Gumbo.

I love the stuff, cheap, nutritious and tasty. If you like Southern greens like collards and turnips, you'll love kale. I do like several have said, cooked down with red onions and andouille or with lentils in soup. Roasted with olive oil and salt as chips is good to.

If you have food 'things' and your momma used to cut the crusts off your bread, you probably won't like kale.

Thanks to all of you for the ideas. I'm gonna split it in half and try two different methods suggested here. If I don't like it, well, there is always the compost pile.

OK, I've got so much I decided to divide it up and try 4 recipes. Yesterday I tried No. 1:

Steamed Kale for about 3-4 minutes. Put in mixing bowl and added kosher salt and ground black pepper. Drizzled a little bit of olive oil and tossed everything. Served hot.

It was GREAT! Tasted like butter. Wife said 'so you added butter?' Me: "Nope, no butter."

Today, I'm going to try Kale slaw using it raw.

Creamed kale. Also works with collards. It balances out the healthy aspect of kale.

Blanch greens. Squeeze out moisture. Heat 2 tablespoons of butter. Add diced shallot and a garlic clove smashed. Then add cup of cream, reduce by half. Add in chopped kale and warm through. This is from Southern Comfort cookbook and it is awesome

Not a lot.
BTW, the color of Kale when steamed is the darkest green I've ever seen. It's really impressive.

I just finished No. 2 ... the slaw. Mixed some chopped raw kale with some chopped red cabbage. Added olive oil, pepper and mayo. Mixed up...set in fridge for an hour. It was excellent.

She likes the steamed Kale but she will not try the slaw since she doesn't like regular coleslaw.

Will try experiment No. 3 tomorrow.
