Squirrel Assassin's Haul - Need Recipe Ideas

Took away the boy's .410 cause he was killing more game than he/we could process when we got to Texas.
Restricting him to a .177 pump air rifle helped, but he still gets anywhere from 4 to 15 squirrels every morning by 9am (typically running around barefoot).
Any ideas on what to do with 40+ squirrels? (80% bucks). Does deboned squirrel freeze well? Maybe thinking some kind of squirrel casserole?
Last couple mornings' haul:

Squirrel and dumplings. Squirrel gumbo. BBQ squirrel-I parboil first then finish on grill.

I was up at a friends place in Knoxville a few years ago for the Bama-UT game. They skinned a squirrel, threw it in a bag of marinade overnight, stuck a skewer through it, and threw it on the grill.
We had squirrel on a stick being passed around the tailgate. Scared the hell outta all the girls, but it tasted amazing.

They are great grilled. I marinate them in Italian dressing and Worcestershire sauce and wrap a strip of bacon around them.
Boil them in crab boil, debone, put the meat in a tomato based soup with noodles.
I like them fried.

Makes anything good. I put a little crab boil in my boiling potatoes when making mashed potatoes. It's life changing.

That's brings back some good memories.
My boy would get up early & do the same thing & expected me to cook his kill. Of course I did....I then went to McDonalds for a salad for myself. :)

Those are some big grey squirrels. I had to look clsoer to make sure they weren't red/fox squirrels.
I southern fry the young ones. It's pretty dam good. Have never done it with mature ones but imagine if you season & soak 'em for a few days in the fridge it could tenderize them enough.
Gumbo's not my fav but a lot of people I know love them in one.

Soak them in buttermilk for 8 hours minimum, batter them like you would chicken and fry them.

Put the mature ones in the pressure cooker for 10 minutes before frying. Use the broth to make a gravy.

Squirrel gravy and squirrel jambalaya are the only two ways I cook it.

The squirrels in this area (Fort Bend County, TX) are freakishly large. The red/fox squirrels are double to triple the size of the greys you see in the above pics.
