Use a couple of different chili powders. Add a little corn flour or meal to tighten up the texture. Add a Hershey bar.

I have a friend that swears by dropping a blob of peanut butter in towards the end of the cooking. I've never tried it though.

Alot of people are going to recommend putting some chocolate in there...... Don't do it. It ruined the chili the one time I've had it with chocolate

I like to cut up a couple filets and brown and put in as my meat, way better than hamburger

i would say don't skimp on the cumin. To many chilis i've tasted have nothing but a tomato/beef flavor and nothing else.
