I'd feel bad trading for something other than someone else's homebrew. I like to think my beer is good, but I don't think it can hold its own with trade-worthy beers.

i wouldnt trade for one offs, but if you wanted some black butte porter

I only bottle and nearly always throw some in on trades, especially to make up volume differences when $4$ trading

I'd agree with this... Most of the time when I taste a beer that is boozy it was fermented a little too high and there may be some fusel alcohols in there giving you that .

I plugged your recipe into BeerSmith and it looks like dropping to a half pound on Brown Sugar and Syrup will only drop your gravity under 10 points.

If you like the flavor profile other than the booziness I'd rebrew with the same recipe and try and keep the fermentation temp in the mid 60s.

Same here. I have the ability to keg if i wanted, but i like being able to store my brews and have them later. I also give out a bunch when i brew. I typically get maybe 40-42 12 oz. bottles out of a batch, roughly a 12 pack or more are given out. So if someone wants a homebrew, i'll gladly give them one with no stipulations.

Agreed. I just throw mine in as extras in trades.

Does anyone have any knowledge about deep cleaning a barrel? I am going to attempt to kill off everything in my barrel this weekend. The beer I have been working on for a while has turned to vinegar ( ) and it is time to get it out of the barrel and do some rescue on the barrel if possible. From what I have gathered online a sodium carbonate/percarbonate solution for a day followed by a citric acid solution, then 150 degree water is a decent place to start. I could certainly attempt to release sulfur into the barrel, but that seems dangerous. I am prepared to cut my losses if I cannot get it cleaned out, but obviously am going to try anything I can to fix it.

I have no experience, but keep us posted on how it turns out. I've let my barrel sit around for a while and it could use a nuking before I use it again. I was thinking just getting a whole bunch of whiskey and filling it up, but I might as well buy a new barrel for what that would cost me in cheap whiskey to fill it. Maybe get a couple handles and just rotate it over the course of a couple weeks.

I actually have barrel cleaner. I got if from a website i can no longer find. It's basically a 2 step soaking process, kind of like using pbw and starsan.

It came with barrel cleaner, and a barrel curing solution. Basically you mix the solution with water and just let it sit, and it keeps the barrel from drying out, without molding or anything.

That's what mine is filled with. 2 handles of albertson's whiskey, with a little water. I used to rotate it, but i haven't in a while

I wasn't planning on brewing anything today, but I decided to go and get ingredients for a graff. The cooler weather has me wanting cider and I haven't made any in a while. Need something to mix with whiskey when it gets cooler out.

Just checked my notes. Brewed 1/13/13, so the fermentation temp would have been in the low to mid 60's at the most.

I did a 5 gallon boil, but I know I didn't take into account evaporation, and when I bottled I only had about 4 gallons.

One thing I noticed in my notes is that my target fg, according to brewers friend, was 1.021, but I measured 1.011. Big difference and probably accounts for some of the booziness

Can't wait to brew it again, with a year of experience and a much better brewing calculator like beersmith

eta: when I put this into Beersmith, it gave an estimated FG of 1.013, which is much closer to what is actually was

All this barrel talk got me curious. I took mine down and inspected it. Bone dry. Whoops. Just filled it up with the hose and it's leaking like a mofo. I got some work cut out.

I did that too. The end belt came off of it too. Wedged it back on and kept filling it with hot water for a few days until it swelled back up.

Thanks for that. in the end those two packets are just sodium carbonate and citric acid. The one addition is magnesium sulfate to the sodium carbonate. And then the sterilizing tablets which I assume are citric acid and potassium metabisulfite. For 7 dollars will probably jump on it however they are selling it for 1-5L barrels which is a 4th of the size of mine, so it may just be easier to make the solutions myself.
