Does it make a difference what type of olive oil you use?

I buy the more expensive imported Italian type. Didn't know if I could go the cheaper route and use something like crisco olive oil?

Using it for general cooking purposes...

I use a LOT of olive oil. And I buy the cheap stuff. Can't taste the difference.

for general cooking purposes, I don't think it matters

I always keep a bottle of the good stuff for vinaigrettes and such though

Extra Virgin is a necessity in every kitchen. If you want to sear/sauté in light olive oil go ahead. I use Canola for that.

The question is what are you doing with it? If just sauteing you can use just about any olive oil. Extra virgin is going to have a lower smoke point, but its unlikely you are really cooking at a high enough range for that to matter.

For finishing dishes, like say peas with mint, parm, and prosciutto I like a high quality, grassy spicy extra virgin olive oil.

I get olives and olive oil shipped from my relatives' farm in Greece. I couldn't tell you how it compares to good olive oil, but I use it for literally everything.

I've been buying my extra virgin from Whole Foods but recently switched to this from amazon.com. Olives are grown in Mexico but processed in U.S. It's got a nice flavor and at $35 a gallon the price sure is right. I have a suspicion that most of the imported olive oils are blended with the cheap stuff from North Africa anyway.

Basically, if you're using it as a cooking medium, to saute something, no. If the oil is a large portion of the flavor of what you're cooking, like in a vinaigrette, yes.

If you are cooking with it no, doesn't matter. Just make sure its real olive oil. Lot of fillers in some of them.

If drizzling over the top of something, yes. It absolutely matters.

I buy the Kirkland Brand from Costco. Good enough for when it matters and cheap enough that I don't mind using it when it doesn't matter.

You don't need to use an expensive olive oil for frying as it will really just lose the flavor you buy it for. You should go to Nor Joe Imports for olive oil. They have a great selection. Just ask for help if you need it.

While you're there get yourself a muffaletta. Good ones there!
