Homemade frozen meals.

Some friends of ours just had a baby, and my wife is wanting me to make a meal that you can freeze and give to her later. I've never done this, and I really don't know where to begin. I've been given these meals before, and they've mostly been pasta.

Any suggestions?

Prob b/c they freeze well. Lasagna is great for this. So is Gumbo, they just have to make rice and thaw the gumbo in a pot.

Also, do they cook at all? This is important.

I have no clue. It's her friend from work, but I assume any dummy can cook rice.

Pot roast. There's nothing like a slow cooked meat and potatoes dish to enjoy while you're life has been turned upside down by a birth.

I just talked to my wife, and she says her friend isn't a huge meat/poultry eater. So I guess I'm really going with red beans and rice, minus the sausage.

Vegetable lasagna. Made one of these last night with grilled eggplant and squash from the garden.
