Coater inspired red beans option thread

Coater mentioned last night in the WFDT thread about the posiblities for use of red beans... He said the red bean nachos were great... Otis (I think) said they were good rolled up in tortillias.

Tonight, I put some leftover red beans on a Hewbrew National dog, and they were very good.

What are some creative ways you have used leftover red beans?

Speaking if omelets.......I've been wanting to do a pulled pork omelet.

yep. Use day old RB&R mixed together and stuffed into the omelette...same for leftover jambalaya...both are very good.

Fitzmorris was talking about red bean omelettes today. Might give them a try if they were put in front of me.

I just googled and found several New Orleans restaurants that have or used to have it on the menu. I don't recall ever seeing it.

Eta: CB you have to make a pulled pork omelette and take pics. That sounds great

It'll probably be a few weeks before I do another pork butt.

Gonna try my hand at smoking a turkey breast this weekend though

To expand upon this, I have a Honduran friend who uses red beans for baleadas

Spread hot RB on a steamed tortilla, top with a poached egg and pico de gallo.

Favorite b'fast

Recommend 2 Beano tablets before consuming.
