If so, which type? Like a bleu cheese or gorgonzola

Every now and then, usually cheaper cuts. Typically blue cheese.

Not my thing either, but I could see bleu cheese crumbles. I may try this sometime.

I love a blue cheese sauce to put on the big old cheap t-bones the grocer down the street sells. Just reduce a handful of blue cheese in a sauce pan with heavy cream or milk and a little salt/pepper. I don't know why I love this for t-bones only......

Tried gorgonzola once and it about ruined my steak. I'm open to trying new foods but that experience almost brought an end to that for me.

I make one for filets on occasion. It's more of a gorgonzola or blue cheese butter. I melt the cheese and whisk in softened butter off the heat. I add cayenne and chopped chives or finally sliced green onions. Dollop a spoonful of the mixture on top of the hot sauce. The butter cuts the cheese to the right complimentary flavor for me.

Love some shredded sharp cheddar with a steak...more as a side than a topping.
