I have had seafood in Boston and seafood in South La. I'll take Cajun.
We're having leftovers. Shredded beef, chicken salad, pasta.

It's not. I had it at a restaurant out of state and asked the chef told the waitress how he made it with no measurements. I'm going to try to recreate it. I'd had it last year and tried and made some darn good incarnations, but I was missing out on a certain flavor. I think it was the roasted peppers because I didn't know they were roasted and pureed when I first had it.

I was told he makes sort of a white wine alfredo sauce with cream and white pepper. He roasts and purees the peppers, browns and crisps thick bacon pieces and adds some aged white cheddar. It wasn't real heavy on sauce or cheese, but sauced and cheesed enough. Damn fine flavor, though.

I love the acidity of the wine to cut the richness. Please post your take on the dish.
