Pot Roast question

Making one in croc-pot tomorrow and have red potatoes baby carrots beef broth and some egg noodles.
My question is can I use the egg noodles to thicken the au jus and should I put noodles in immediately?
Or should I not use noodles and not try to make a gravy, since I don't have any flour?

If you put the noddles in immediately they will turn to mush, you'll get a solid "gravy" from all the cooking juices in the pot, don't need flour

No noodles. That would be a hot mess. Go get some flour or cornstarch.

And, if you're trying to get some body, you can also add a tablespoon of tomato paste for a little body and richness. If a thin gravy or au jus is good with you, I agree that flour isn't necessary. I only use it to dust the meat and brown it before roasting.

What I was thinking is making it like a roast over served noodles with vegetables.
I guess I'll boil the noodle separately.
Just wanted a gravy with the food. I don't make gravy so was hoping it could work.

Pasta soaks up juices when left in them for very long. If you want noodles, boil separately and spoon juices over them.

Thank goodness you didn't cook the noodles it, then. No one would believe that result to be intentional.
I don't know how many you're feeding but don't expect a ton if juices to cover a lot of noodles. I'd use rice for sure.

For the noodles :
Brown about 1/2 stick of butter in a pan. When it is golden brown take it off the heat and add a couple of tbsps of balsamic vinegar. Sprinkle in some fresh chopped herbs then add the pasta and toss. You can throw in some shredded parm for good measure.

Throw a lipton onion soup packet, garlic powder, cayenne, salt, pepper, and half of a box of chicken broth in a crock pot.
Dust the roast w flour and brown it in oil. (that is the important part!!!) remove roast. throw in a couple cups of seasoning blend veggies and brown them too. Use a dash of chick broth to deglaze the pot if necessary. Throw all juices, veggies, and meat in the croc pot. Throw a couple links (sliced) of sausage in the crockpot. Cook on low for 6-8 hours. Serve with rice.
