That's right up my alley. Have to make it. Any tricks on getting the runny egg just right besides not overcooking it? (Novice)

I've made similar sandwiches. Great combo. Do it with good bacon and smoked Gouda cheese and wow.

I haven't made it and I'm wondering how to keep the yolk runny without popping it while you put the sandwich together and turn it. The runny yolk would be key for me.

This is my normal method of making grilled cheese, minus the egg. Sometimes I put bacon or ham though
