If you've ever had freshly caught tuna (caught and ate within a day or two) you can't eat that garbage.

Don't listen to that jackass. They serve a good purpose and most all tuna you ever buy has been frozen unless you caught it yourself or had friends fishing here that gave it to you.
If you have eaten sashimi you have eaten frozen tuna.
Just thaw completely and bring to room temperature. Rub a bit of oil on each side and season. Sear, flip and cook to just barely past rare. Let them rest just like a steak for a couple minutes and then slice thin. Make a nice wasabi vinaigrette and drizzle over.

Agreed. The vast majority of Tuna caught to be sold for public consumption is flash frozen right there on the ship.

Agree. I like fresh tuna as much as the next fella, but to say any frozen tuna is garbage is pretty stupid and lame. Don't try and sound all snobby if you really aren't...

JasonL had a great piece in a thread a few years back, talking about how commercialy caught tuna is a much higher quality than recreational caught, as the stress from the fight of a recreational fisher builds lactic acid and the meat is not as good as from a commercialy caught tuna that goes through ,much less stress and is processed ( headed and gutted immediately upon reaching boat and immersed in a super cold ice bath)
So what I got from itis that a week old commercial tuna is better than a day of recreational tuna..... Both are awesome

yes. trust me on this one:
-defrost steaks
-cube them into 1/2 in. cubes
-place inside a container of lemon/lime juice mixture
-place in fridge for 3 days
-make a kraut (coleslaw with vinegar)
-buy/make flour tortillas
-strain the cubes out of the juice
-seaon cubes with salt, pepper, garlic
-add tuna and coleslaw to tortillas.
the best got damn fish taco you will ever eat.

Those frozen tuna steaks from Sam's are fantastic. I get them every time I go.

Agree. Not everyone lives on the coast and has a boat...

Are those the ones in the frozen packaged fish/food section (near the breaded fish) or are there some in the fish section near the meat department?

Marinate them in a mix of soy sauce, ginger, garlic, and a little bit of white pepper. Let them come to temp and sear them. Allow them to sit for a few minutes and put some sesame seeds and sriracha sauce on top.

I make a basting sauce with ginger ale, soy sauce, honey, red pepper flakes, garlic, and sometimes a spoon of creole mustard, all reduced by about 1/2
Marinate in above for 20 min or so, then grill to med rare while basting, also separate some of the sauce before it touchs the raw fish nd use as a dipping sauce

I've had the frozen tuna steaks in a package from rouses...... I've also had the tuna rouses sells in their seafood section... The one in the seafood section is just a tad better tasting but the frozen ones in the freezer section aren't awful

agreed...I think most all seafood that you buy in a store or market has been frozen, regardless of what they tell you...how the hell else would you be eating fish or shellfish caught hundreds or thousands of miles off shore and it not be spoiled?...

Thank god I caught the tuna and didn't buy it from a store. I've had both; freshly caught is far superior, and you can tell the difference. I'm not a food snob either, trust me.

You mean to tell me something fresh tastes better than something frozen. Unbelievable
