Spiced fried chicken. Lucy loves it but it's hard to make.
Take 1 to 2 lbs of boneless skinless chicken breasts. Cut it up into strips ..think the size and shape of your thumb.
Slurry for marinade:
2 tb curry
1 squirt of lime or lemon juice
3 tb terryaki sauce
2 tb mustard
3 tb chili powder
2 tb tumeric
2 tb garlic powder
2 tb onion powder
small sprig of rosemary from the garden..chopped
Mix it up into a paste. Coat the chicken fingers. Put in fridge to marinate for 2 or 3 hours. This is a fried chicken that has no batter.
Heat oil in pan to medium/high. This is a barely deep fry. IE, oil barely covers chicken. Cook each batch for 5 to 6 minutes, turning once.
I had mine with BBQ sauce. Lucy had hers with Ketchup.

It's supposed to be salmon in a lemon butter dill sauce, but just realized I used the last lemon on Friday. Might use lime, but I was counting on the yummy lemon butter dill combo.

Darla, I'm sure whatever you use it will be just fine.

Sounds good. It is pouring in NOLA and I am drunk and don't feel like cooking. Looking like pizza delivery and NOLA Blondes.

Going to grill a couple of burgers and try the roasted garlic clove stuffed French bread for a bun. Should be good- I am tired of the same old thing as far as buns go.
My side will be some oven roasted red skin potatoes.
Blue Bell vanilla bean for dessert!
