Crawfish Pie Recipes...Post Yours

This will make 3 deep dish pies.
2 lbs peeled tails with fat
2 large onions, diced
4 stalks celery, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 T garlic
2 sticks butter
1 cup minced green onions
1/2 cup minced flat leaf parsley
2 cups cream
1 cup bread crumbs
Salt, red and black pepper to taste
2 large eggs, beaten
3 deep dish shells and 3 regular ones for tops
Method
Sauté the onions, celery a and green bell pepper in the butter until sft. Add the garlic and then the crawfish. Sauté a few minutes and add the cream. Bring to a simmer and season to taste. Simmer 5 minutes and then fold in the red bell pepper, green onions, parsley and bread crumbs. Check the seasonings and remove from the heat. Fold in 2 beaten eggs after tempering them with a few spoonfuls of the mixture.
Pour into deep dish shells and cover with a second shell. Brush the tops with either beaten egg white of melted butter if you wish. Bake for 40 minutes at 350.

Will they cut from the oven or do you need to to set a while?

Needs to set up for several minutes. Just cut one and it held up pretty good. An extra egg might be a good call, though.

Seems simple enough. Need to try this soon. Do the shell packages normally come with tops?

Nope. I use the deep dish shell from the freezer section for the bottom and a roll out sheet type shell from the refrigerated section for the top.
